  • 1 medium yellow onion, diced
  • 1 red or green bell pepper, chopped
  • 4–5 cloves fresh garlic, minced
  • 1 tablespoon ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon dried oregano
  • 1 (15-16 oz) can pure pumpkin puree
  • 2 (15 oz) cans black beans, rinsed and drained
  • 2 (14.5 oz) cans diced tomatoes
  • 1 cup vegetable or chicken broth
  • 1 tablespoon lime juice
  • Sea salt and freshly cracked black pepper to taste
  • 1 square dark chocolate (70% cocoa, optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper, cooking for 5-7 minutes until soft and translucent.
  2. Add minced garlic, cumin, chili powder, smoked paprika, cayenne, and oregano. Stir constantly for 1 minute to toast the spices without burning.
  3. Stir in pumpkin puree, diced tomatoes with juices, and broth. Mix well and simmer gently for 2 minutes.
  4. Add rinsed black beans. Bring to a gentle boil, then reduce heat to low. Cover partially and simmer for 20 minutes, stirring every 5-7 minutes.
  5. Check consistency; add broth if too thick or simmer uncovered if too thin. Taste and adjust seasoning with salt and pepper.
  6. Remove from heat and stir in lime juice. If using, melt in the dark chocolate square.
  7. Ladle into bowls and serve immediately with desired garnishes.

Notes

For best results, toast the spices in oil to release their essential oils. Rinse beans thoroughly to remove excess sodium and starch. The chili thickens as it cools, so add a splash of broth when reheating. Leftovers keep in the fridge for 5 days or freeze for up to 3 months.
