  • ⅓ cup baking soda (for the bath)
  • 8 cups water (2 liters, for the bath)
  • 1 egg (for egg wash, beaten with 1 tablespoon water)
  • Coarse sea salt (for sprinkling)
  • 24–30 whole almonds (raw, one for each pretzel rod)
  • Optional: Red food coloring or paprika (for tinting the ‘nail bed’)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (about 110°F) and sugar. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining flour, ½ cup at a time, until dough pulls away from the sides of the bowl. It should be slightly sticky but manageable.
  3. Knead the dough: Turn dough onto a lightly floured surface. Knead for 6-8 minutes until smooth and elastic. Add more flour if too sticky, but not too much.

  6. Add the almond nails: Press one whole almond firmly into the tapered end of each finger, pointed end outward, about ¼ inch deep. Optionally, dip almond tip in diluted red food coloring before pressing.
  7. Prepare the baking soda bath: Bring 8 cups of water to a boil in a large pot. Carefully add ⅓ cup baking soda (it will bubble up). Reduce heat to a gentle simmer.
  8. Boil the pretzels: Working in batches of 4-5 fingers, gently lower shaped pretzels into simmering water. Boil for 30 seconds per side (60 seconds total). Remove with slotted spoon and place on parchment-lined baking sheets, spacing 2 inches apart.
  9. Apply egg wash and salt: Beat egg with 1 tablespoon water. Brush each boiled pretzel finger with egg wash. Sprinkle generously with coarse sea salt.
  10. Bake: Preheat oven to 400°F (200°C). Bake for 12-15 minutes until deep golden brown and almonds are lightly toasted.
