  • Pinch of sea salt
  • Optional: 1 tablespoon Greek yogurt or splash of heavy cream for extra creaminess
  • Toppings of your choice (fresh berries, sliced banana, toasted nuts, shredded coconut, nut butter, cacao nibs)

Instructions

  1. In a mason jar or small bowl, combine 1 cup milk, 1-2 tablespoons maple syrup or honey, 1/2 teaspoon vanilla extract, and a tiny pinch of sea salt. Whisk until well combined and salt is dissolved.
  2. Sprinkle 3 tablespoons chia seeds evenly over the liquid mixture. Whisk immediately to combine.
  3. Let the mixture sit for 2 minutes, then stir vigorously again to break up any clumps.
  4. Let it rest for another 3 minutes until thick and creamy, similar to yogurt or thin pudding. If still too liquidy, let sit for 2-3 more minutes.
  5. Give it one final stir to ensure a smooth, uniform texture.
  6. Add desired toppings such as fresh berries, sliced banana, almond butter, or granola.
  7. Serve immediately or refrigerate for later. The pudding gets creamier as it chills.

Notes

For best texture, use fresh chia seeds and stir twice: once immediately after adding seeds and again after 2 minutes. Room temperature milk absorbs faster than cold milk. The pudding tastes even better on day two as flavors meld. Store in an airtight container in the refrigerator for up to 5 days. Can be frozen for up to 2 months.
