Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 2/3 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • 2 cups cooked, shredded chicken (about 2 large breasts or rotisserie chicken)
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • Celery sticks, carrot sticks, tortilla chips, or crusty bread for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed for about 2 minutes until completely smooth and fluffy.
  3. Add the sour cream and ranch dressing. Beat on low speed until well combined and smooth.
  4. Add the buffalo hot sauce, apple cider vinegar, garlic powder, onion powder, and smoked paprika (if using). Mix on low speed until uniform. Taste and adjust heat if desired.
  5. Fold in the shredded chicken, 1 cup of cheddar cheese, and 1/2 cup of mozzarella cheese using a rubber spatula until evenly coated.
  6. Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar and 1/2 cup mozzarella over the top.
  7. Bake for 20-25 minutes, until hot and bubbly around the edges and the cheese on top is melted and lightly golden. For a browner top, broil for the last 2 minutes, watching closely.
  8. Let the dip rest for 5 minutes before serving. Serve warm with celery sticks, carrot sticks, tortilla chips, or crusty bread.

Notes

Make sure cream cheese is truly softened to avoid lumps. Let the dip rest for 5 minutes after baking for perfect scoopability. For parties, transfer to a slow cooker on warm to keep it creamy. Leftovers can be stored in the refrigerator for up to 4 days and taste even better the next day.
