  • 1 cup (120g) sharp cheddar cheese, shredded
  • ¼ cup (30g) fresh chives or green onions, chopped
  • Sour cream, for serving (optional)

Instructions

  1. Prep your ingredients: Peel and dice potatoes into ½-inch cubes. Finely chop onion and mince garlic. Soften cream cheese by letting it sit on the counter.
  2. Cook the bacon: Place bacon slices in a cold large skillet. Turn heat to medium and cook, flipping occasionally, until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain. Once cool, crumble into small pieces.
  3. Layer ingredients in the crockpot: Place diced potatoes, chopped onion, and minced garlic in the bottom of a 6-quart or larger slow cooker. Pour chicken broth over the top. Add salt, pepper, smoked paprika, and dried thyme. Stir to combine.
  4. Slow cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until potatoes are fork-tender.
  5. Add cream cheese and cream: Turn slow cooker to WARM or off. Add cubed cream cheese and heavy cream. Stir gently until cream cheese is completely melted and soup is smooth, about 2-3 minutes.
  6. Mash for creaminess: Using a potato masher, gently mash the soup right in the crockpot, leaving some chunky potato pieces for texture (about 6-8 mashes).
