Creamy Crockpot Taco Soup

A comforting, easy-to-make slow cooker soup featuring ground beef, beans, and a secret ingredient of cream cheese for a rich, velvety texture. Perfect for busy weeknights and meal prep.

  • 1.5 pounds lean ground beef (90/10 or 93/7)
  • 1 large yellow onion, finely diced
  • 1 packet taco seasoning (or 2–3 tablespoons homemade blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn (or 1 cup frozen corn kernels)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 1/2 cup heavy cream or half-and-half
  • 8 oz cream cheese, cut into cubes
  • 1 cup shredded Mexican blend or cheddar cheese, for serving
  • Crushed tortilla chips, for garnish

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the meat, until beef is no longer pink and onions are soft (8-10 minutes). Drain excess fat if necessary.
  2. Sprinkle taco seasoning over the beef and onion mixture. Add a splash of water if dry and stir well. Simmer for 2 minutes to let spices bloom.
  3. Transfer the beef mixture to a 6-quart slow cooker. Add drained black beans, kidney beans, corn, undrained diced tomatoes, chicken broth, and green chiles. Stir to combine.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until flavors have melded.
  5. About 30 minutes before serving, turn the slow cooker to HIGH. Add cubed cream cheese and stir frequently until fully melted and incorporated.
  6. Stir in heavy cream or half-and-half. Taste and adjust salt or pepper if needed. Ladle into bowls and top with shredded cheese, crushed tortilla chips, avocado, and fresh cilantro.

Notes

For best results, brown the meat before adding to the slow cooker to develop deeper flavor. Add cream cheese in the last 30 minutes to prevent separation. If the soup is too thick, add more broth; if too thin, cook uncovered on HIGH for the last 30 minutes. Dairy-free versions can use coconut cream and dairy-free cream cheese.
