  • 2 (15-ounce) cans white beans (Cannellini or Great Northern), drained and rinsed
  • 1 cup frozen corn
  • 1 (4-ounce) can diced green chiles, including juice
  • 2 cups low-sodium chicken stock
  • 1 (8-ounce) block cream cheese, cut into cubes
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional toppings: sour cream, fresh cilantro, crushed tortilla chips

Instructions

  1. Finely dice the onion and mince the garlic.
  2. Place the diced onion and minced garlic into the bottom of a 6-quart slow cooker.
  3. Place the chicken breasts or thighs on top of the onions.
  4. Pour in the chicken stock, drained white beans, and canned green chiles with their juice.
  5. Sprinkle cumin, chili powder, dried oregano, salt, and pepper over the ingredients without stirring.
  6. Cover and cook on LOW for 6 to 8 hours (or HIGH for 3 to 4 hours) until chicken is cooked through.
  7. Remove chicken and shred into bite-sized pieces using two forks; return to pot.
  8. Stir in the frozen corn and cubed cream cheese.
  9. Cover and cook on HIGH for an additional 30 minutes, stirring occasionally, until cream cheese is fully melted and chili is smooth.
  10. Taste and adjust seasoning with salt or pepper; add broth if too thick or cook uncovered if too thin.

Notes

Do not skip rinsing the beans to avoid slimy texture. Cut cream cheese into small cubes for easier melting. If using chicken breasts, monitor time to prevent drying out. For a dairy-free option, swap cream cheese for a coconut-based alternative. Leftovers can be frozen for up to 3 months, though texture may change; reheat with a splash of broth.
