  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium)
  • 3 cups frozen corn
  • 2 (15-ounce) cans white beans (Great Northern, cannellini, or navy), drained and rinsed
  • 1 (4-ounce) can diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened and cut into cubes
  • ½ cup heavy cream
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano (preferably Mexican)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional garnishes: fresh cilantro, lime wedges, shredded Monterey Jack cheese, diced avocado, tortilla chips, sour cream

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the beans, cut cream cheese into cubes, and measure out spices.
  2. Place the chicken breasts in the bottom of a 6-quart slow cooker. Add the diced onion, minced garlic, frozen corn, drained beans, and diced green chiles on top and around the chicken.
  3. Sprinkle the cumin, chili powder, oregano, salt, and pepper over everything. Pour in the chicken broth. Do not stir.
  4. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Carefully remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker.
  6. Add the cubed cream cheese and heavy cream. Stir gently until the cream cheese is completely melted and the broth is silky and white (about 2-3 minutes).
  7. If desired, let the chili cook on low for an additional 15-30 minutes to thicken. Otherwise, serve immediately.
  8. Taste and adjust seasoning with more salt, pepper, or cumin if needed. Serve hot with desired toppings.

Notes

Do not add cream cheese at the beginning; it will become grainy. Use frozen corn for best texture and sweetness. Shred chicken while still warm. Season in layers, starting with less salt. Let chili rest 10-15 minutes before serving for best flavor. To thicken, mash some beans against the side of the pot.
