  • 2 cups creamy, full-fat eggnog
  • 1 cup heavy cream
  • 4 large eggs, room temperature
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp cinnamon
  • 2 tbsp butter, melted (for brushing top)
  • Maple syrup (for serving)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut the brioche loaf into 1-inch cubes and place them in a 9×13 inch baking dish, layering them tightly but not packed down.
  3. In a large bowl, whisk together the eggs, heavy cream, eggnog, sugar, vanilla, nutmeg, and cinnamon until the sugar is dissolved and the mixture is uniform.
  4. Pour the custard evenly over the bread cubes. Use a spatula to gently press down on the bread to ensure all pieces are submerged.
  5. Let the casserole sit for 15 minutes if cooking immediately, or cover and refrigerate overnight.
  6. If refrigerated, let the dish sit at room temperature for 20 minutes before baking. Drizzle the melted butter over the top.
  7. Bake for 45-50 minutes, or until the top is golden brown and the center is set but slightly jiggly.
  8. Let the casserole cool for 10 minutes before serving to allow the custard to set.
  9. Serve warm with maple syrup and powdered sugar.

Notes

Day-old brioche or challah works best as it absorbs the custard without becoming mushy. If the top browns too quickly, cover loosely with foil for the last 10 minutes. For a dairy-free version, substitute heavy cream with coconut cream and butter with coconut oil. For gluten-free, use gluten-free brioche but reduce soaking time as it absorbs liquid faster.
