  • 1 cup sour cream
  • 1/2 cup ranch dressing
  • 1 packet (1 oz) dry ranch seasoning mix
  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo sauce
  • 1 tablespoon pickle juice
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, sliced (for topping)
  • 1/4 cup crumbled blue cheese (optional, for topping)
  • Fresh parsley for color (optional)

Instructions

  1. Let cream cheese sit on the counter for about 30 minutes to soften. If in a rush, microwave in 10-second bursts until soft but not melted.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, ranch dressing, and dry ranch seasoning. Beat with a hand mixer or whisk until smooth and fluffy (about 2 minutes).
  3. Fold in shredded chicken, buffalo sauce, and pickle juice. Stir until evenly coated.
  4. Lightly grease a slow cooker with non-stick spray. Spread half of the cream cheese mixture on the bottom. Sprinkle with half of the cheddar and Monterey Jack cheeses. Repeat with remaining mixture and top with remaining cheese.
  5. Cover and cook on low for 2 to 2.5 hours, or on high for 1 to 1.5 hours, until edges are bubbly and cheese is melted. Stir before serving.
  6. Sprinkle with sliced green onions, crumbled blue cheese (if using), and fresh parsley. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

If the dip looks too thick after cooking, stir in a splash of milk or chicken broth to thin it out. If too thin, let it cook uncovered for another 15-20 minutes. For a baked version, transfer to a greased 9×13 dish and bake at 375°F for 20-25 minutes, then broil for 2-3 minutes for a golden top. The dip can be assembled up to 24 hours in advance and refrigerated before cooking.
