  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g), pounded slightly for even cooking
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (oil-packed preferred)
  • 1 cup chicken broth (240 ml), low sodium
  • 1/2 cup heavy cream (120 ml), or half-and-half for lighter option
  • 3/4 cup grated Parmesan cheese (75 g), freshly grated
  • 1 teaspoon dried Italian seasoning (or mix of oregano, basil, thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch (1.25 cm). Season both sides with salt, pepper, and 1/2 teaspoon dried Italian seasoning. (About 10 minutes)
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken breasts and cook undisturbed for 4-5 minutes until golden brown. Flip and cook another 4 minutes until cooked through but still juicy. Remove chicken and set aside tented loosely with foil. (Approximately 10 minutes)
  3. Lower heat to medium. Add remaining olive oil and butter to the pan. Sauté minced garlic and sun-dried tomatoes for 1-2 minutes until fragrant and softened.
  4. Pour in chicken broth, scraping up browned bits with a wooden spoon. Let simmer for 3 minutes to reduce slightly.
  5. Stir in heavy cream and gradually add grated Parmesan cheese, stirring until sauce thickens and becomes creamy. Add red pepper flakes if using. Taste and adjust salt and pepper. (5-6 minutes)
  6. Return chicken breasts to the pan, spoon sauce over them, and simmer together for 2-3 minutes to meld flavors. Remove from heat and garnish with fresh parsley before serving.

Notes

If sauce is too thick, add a splash of broth or water to loosen. For thicker sauce, add more Parmesan gradually. Cook cream sauce on medium or medium-low heat to avoid curdling. Use freshly grated Parmesan for best melting and flavor. Soak dry sun-dried tomatoes in warm water for 10 minutes if oil-packed are unavailable. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast.
