  • 1/2 cup (120ml) milk (dairy or plant-based)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana (about 100g mashed)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • Optional toppings: sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, sprinkle of cinnamon

Instructions

  1. Mash the banana: Peel the ripe banana and place it in the bottom of a mason jar or mixing bowl. Use a fork to mash it until completely smooth, like baby food consistency.
  2. Add the wet ingredients: Pour in the milk, Greek yogurt, and peanut butter. If using maple syrup or honey, add it now. Stir until the peanut butter is fully incorporated and the mixture is smooth.
  3. Add the dry ingredients: Sprinkle in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir until the oats are fully coated in the liquid mixture.
  4. Mix thoroughly: Put the lid on the jar and shake it vigorously for about 10 seconds to ensure everything is evenly distributed and break up any clumps.
  5. Refrigerate overnight: Place the jar in the fridge for at least 6 hours, but overnight (8-12 hours) is ideal.
  6. Stir in the morning: Take the jar out of the fridge and give it a good stir. If too thick, stir in an extra splash of milk until desired consistency.
  7. Add toppings and enjoy: Top with sliced banana, a drizzle of extra peanut butter, a sprinkle of cinnamon, or other desired toppings. Eat cold or let sit at room temperature for 10 minutes.

Notes

For best results, use a very ripe banana with brown spots for natural sweetness. The oats taste even better on day 2 as flavors meld. To make vegan, use plant-based milk and yogurt. For gluten-free, use certified gluten-free oats. Can be stored in the fridge for up to 5 days.
