These creamy peanut butter banana overnight oats are a quick, no-cook breakfast that tastes like a milkshake but is good for you. Made with simple ingredients and a special technique, they’re perfect for busy mornings.

Ingredients

Scale
  • 1 cup (100 grams) rolled oats (old-fashioned oats)
  • 1 medium ripe banana (about 120 grams, peeled weight)
  • 3 tablespoons (48 grams) creamy peanut butter
  • 1 cup (240 ml) milk of choice (whole milk, oat milk, almond milk, or coconut milk)
  • 1 to 2 tablespoons (15–30 ml) maple syrup or honey
  • 1 tablespoon (15 grams) chia seeds (optional but recommended)
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/8 teaspoon fine sea salt (a pinch)
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana in your jar or a small bowl with a fork until almost smooth.
  2. Warm the milk in a microwave-safe bowl for about 20 seconds until lukewarm (optional but recommended).
  3. Add the peanut butter, maple syrup, vanilla extract, and warmed milk to the jar with the mashed banana. Stir until smooth.
  4. Add the rolled oats, chia seeds (if using), and salt. Stir until well combined.
  5. Seal the jar and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk.
  7. Add desired toppings and enjoy cold or warm (microwave 30-60 seconds).

Notes

Mashing the banana first is crucial for creamy texture. Warming the milk helps the peanut butter incorporate smoothly. For best results, let oats sit overnight (8-12 hours). Oats keep in the fridge for up to 5 days; texture is best within first 3 days. Do not freeze.
