A moist, spiced pumpkin cake rolled with a thick, silky cream cheese filling. This easy dessert comes together in under 45 minutes and is perfect for holidays or cozy weeknights.

  • 1 cup (125g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons freshly ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground ginger
  • 2 large eggs, room temperature
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon pure vanilla extract
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper, allowing overhang for easy removal, and grease lightly.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat eggs, sugar, oil, and vanilla extract until well combined and slightly pale.
  4. Gradually add dry ingredients to wet mixture, mixing on low until just combined. Fold in pumpkin puree.
  5. Spread batter evenly into the prepared pan and bake for 12-14 minutes until edges pull away and cake springs back to touch.
  6. While cake bakes, lay a clean kitchen towel on a surface and dust generously with powdered sugar.
  7. As soon as cake comes out of oven, loosen edges, place towel over pan, and flip carefully. Peel off parchment. While still warm, gently roll cake up with towel inside, starting from short end. Let cool completely on a wire rack.
  8. Once cake is cool, beat softened cream cheese, powdered sugar, vanilla, and lemon juice until smooth and creamy.
  9. Unroll cooled cake. Spread cream cheese filling evenly over surface, leaving a small border at edges. Carefully roll cake up again without the towel.
  10. Place seam-side down on a serving platter and refrigerate for at least 1 hour to set before slicing.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Do not use pumpkin pie filling; use 100% pure pumpkin puree. Roll the cake while warm to prevent cracking, then unroll, fill, and roll again. Chill for at least 1 hour for clean slices.
