  • 6 cups Yukon Gold potatoes, cubed (about 2 pounds or 45 medium potatoes)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Fresh parsley, chopped (optional garnish)
  • Shredded cheddar cheese (optional garnish)
  • Crispy bacon bits (optional garnish)
  • Green onions, sliced (optional garnish)

Instructions

  1. Brown the sausage: Heat olive oil in a large skillet over medium-high heat. Add sliced sausage in a single layer and cook for 3-4 minutes per side until nicely browned. Transfer sausage to slow cooker using a slotted spoon, leaving drippings in the pan.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion to the same skillet with sausage drippings. Cook for 3-4 minutes until softened and translucent, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant. Transfer to slow cooker.
  3. Layer the potatoes and broth: Add cubed potatoes to slow cooker on top of sausage and onions. Pour in chicken broth. Add dried thyme, smoked paprika, black pepper, and salt. Stir gently to distribute seasonings.
  4. Slow cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until potatoes are fork-tender.
  5. Make the cornstarch slurry: In a small bowl, whisk together cornstarch and cold water until completely smooth.
  6. Add the cream and slurry: Turn slow cooker to high if not already. Pour in heavy cream and cornstarch slurry. Stir gently. Cover and cook for 15-20 minutes until soup has thickened.
  7. Taste and adjust: Taste soup and adjust seasoning as needed. Add more salt, pepper, or a pinch of cayenne if desired.
  8. Serve and garnish: Ladle soup into bowls. Top with fresh parsley, shredded cheddar, crispy bacon, or green onions as desired.

Notes

Don’t add the cream too early or it may curdle. Cut potatoes evenly for consistent cooking. Use smoked sausage, not raw. Layer potatoes at the bottom for softer texture or on top for firmer. Resist lifting the lid during cooking. For a thicker soup, let potatoes cook longer. If soup is too thick, add a splash of broth or milk. If too thin, mix another tablespoon of cornstarch with a tablespoon of cold water and stir in, then cook for 10 more minutes.
