A rich and creamy Tuscan-inspired soup featuring Italian sausage, white beans, and fresh spinach slow-cooked to perfection in a crockpot. Perfect for cozy dinners and easy to prepare with simple ingredients.

  • 1 pound Italian sausage (mild or spicy)
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups chicken broth (preferably low-sodium)
  • 1 cup heavy cream
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (optional)
  • 3 cups fresh baby spinach, rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • ¼ teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add Italian sausage, breaking it up with a wooden spoon, and cook for 6-8 minutes until browned and cooked through. Drain excess fat if needed.
  2. In the same skillet, add chopped onion and sauté for about 3 minutes until translucent. Add minced garlic and cook for another 1 minute until fragrant. Remove from heat.
  3. Transfer browned sausage, sautéed onions and garlic, drained cannellini beans, chopped sun-dried tomatoes, chicken broth, dried Italian herbs, red pepper flakes, salt, and pepper into the crockpot.
  4. Cover and cook on low for 4 to 6 hours (or on high for 2-3 hours) until flavors meld and beans soften.
  5. About 15 minutes before serving, stir in fresh baby spinach and heavy cream. Continue cooking with the lid off until spinach wilts and soup is heated through.
  6. Taste and adjust seasoning with salt, pepper, or additional red pepper flakes as desired.
  7. Ladle soup into bowls and optionally garnish with freshly grated Parmesan cheese or fresh basil.

Notes

Brown the sausage thoroughly to add depth of flavor. Rinse canned beans to reduce sodium. Add spinach and cream at the end on low heat to prevent curdling. Adjust thickness with extra broth or water if needed. For dairy-free, substitute heavy cream with coconut or cashew cream. For vegetarian, replace sausage with smoked paprika-seasoned mushrooms and use vegetable broth.
