These crispy bacon ranch pinwheels are the ultimate tailgate appetizer, featuring a creamy ranch and cheddar filling with crispy bacon, all wrapped in a flour tortilla and baked until golden. Quick to make and always a crowd-pleaser.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (about 8 slices)
  • 2 green onions, thinly sliced (optional)
  • 4 large flour tortillas (burrito-sized, about 10 inches)
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook the bacon until crispy. Bake at 400°F for about 15 minutes, then crumble into small pieces.
  3. In a medium mixing bowl, combine the softened cream cheese and ranch seasoning mix. Stir until smooth. Add the shredded cheddar cheese, crumbled bacon, and sliced green onions (if using). Mix until evenly distributed.
  4. Lay one tortilla flat on a cutting board. Spread about 1/4 of the cream cheese mixture evenly across the entire surface, leaving a 1/2-inch border around the edges.
  5. Starting from one edge, roll the tortilla as tightly as possible without tearing. Place seam-side down. Repeat with remaining tortillas and filling.
  6. Wrap each roll in plastic wrap and refrigerate for at least 30 minutes.
  7. Once chilled, slice each roll into 1-inch thick pieces (about 8 to 10 per tortilla).
  8. Place the pinwheels on the prepared baking sheet, spacing them about 1/2 inch apart. Brush the tops with melted butter.
  9. Bake at 400°F (200°C) for 12 to 15 minutes, until edges are golden brown and cheese is bubbly. Let cool on the baking sheet for 5 minutes before serving.

Notes

Chill the rolls for at least 30 minutes before slicing to prevent them from falling apart. Use room temperature cream cheese for smooth mixing. For make-ahead, assemble rolls and refrigerate up to 24 hours before slicing and baking.
