  • 1 tablespoon olive oil (for the cauliflower)
  • ½ cup all-purpose flour (or gluten-free 1:1 blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup buttermilk (or ½ cup milk + ½ tablespoon lemon juice, let sit for 5 minutes)
  • 1 large egg
  • 1 ½ cups panko breadcrumbs
  • 2 tablespoons olive oil (for the panko)
  • ½ teaspoon salt (for the panko)
  • ½ cup Frank’s RedHot Original sauce
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon honey
  • Ranch or blue cheese dressing (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Fresh chives or parsley, chopped (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack on a large baking sheet and spray it lightly with non-stick spray.
  2. Wash and thoroughly dry the cauliflower head. Cut it into uniform, bite-sized florets—about 1.5 inches each. Pat them very dry with a clean kitchen towel.
  3. In the first shallow bowl, whisk together the flour, garlic powder, smoked paprika, salt, and pepper. In the second bowl, whisk together the buttermilk and egg until smooth. In the third bowl, combine the panko breadcrumbs, 2 tablespoons of olive oil, and ½ teaspoon salt. Mix with your fingers until the oil is evenly distributed and the panko looks slightly clumpy.
  4. Toss the dry cauliflower florets with 1 tablespoon of olive oil in a large bowl. Working in batches, take a few florets and dredge them first in the flour mixture, shaking off any excess. Then, dip them into the buttermilk mixture, letting the excess drip off. Finally, press them firmly into the panko mixture, ensuring they are fully coated. Place the coated florets on the prepared wire rack, leaving a little space between each one.
  5. Bake for 20 minutes. Then, carefully flip each floret using tongs. Bake for another 15-20 minutes, until the cauliflower is tender and the coating is deep golden brown and very crispy.
  6. While the cauliflower bakes, whisk together the Frank’s RedHot, melted butter, and honey in a small bowl. Set aside.
  7. Once the cauliflower is out of the oven, transfer the hot florets to a large bowl. Pour the buffalo sauce over the top and toss gently with a spatula until every piece is coated. Serve immediately with ranch or blue cheese dressing and crunchy celery sticks.

Notes

For extra crispy results, let the coated florets sit on the wire rack for 10 minutes before baking. Serve immediately for best texture. Leftovers can be reheated in the oven or air fryer.
