Instructions

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. Wash zucchini, trim ends, and slice lengthwise into uniform 1/8-inch strips.
  3. Pat zucchini slices dry thoroughly with a clean kitchen towel to remove excess moisture.
  4. In a shallow dish, combine grated parmesan, panko breadcrumbs, and seasonings; mix well.
  5. Whisk egg whites in a small bowl until frothy.
  6. Dip each zucchini slice into egg whites, let excess drip off, then press firmly into the breadcrumb mixture to coat.
  7. Place coated slices on the prepared baking sheet, ensuring they are not overcrowded.
  8. Bake for 10 minutes, then flip each chip carefully with a spatula.
  9. Return to oven and bake for another 5-10 minutes until edges are golden brown and crispy.
