  • 3 tablespoons unsalted butter
  • 1 teaspoon honey or maple syrup (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the boneless skinless chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  2. Place the all-purpose flour in a shallow dish. Dredge each chicken thigh in the flour, shaking off any excess.
  3. Heat a heavy skillet or cast iron pan over medium-high heat and add the olive oil. Wait until the oil shimmers but isn’t smoking (about 2-3 minutes).
  4. Carefully lay the chicken thighs in the pan without overcrowding. Cook undisturbed for 5-6 minutes until the underside is golden and crispy.
  5. Flip and cook another 4-5 minutes until cooked through (internal temperature should reach 165°F).
  6. Transfer the cooked thighs to a plate and tent loosely with foil to keep warm.
  7. Lower the heat to medium, add the butter to the same skillet with the leftover chicken drippings. Once melted, add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  8. Stir in the fresh lemon juice and honey (if using). Let the sauce bubble gently for 1-2 minutes, scraping the pan to lift browned bits. Adjust seasoning as needed.
  9. Stir in chopped parsley for color and flavor.
  10. Drizzle the lemon garlic sauce generously over the crispy chicken thighs and serve immediately.
