  • 1/2 cup (113g) Unsalted Butter
  • 1/4 cup Fresh Sage Leaves, finely chopped
  • 1 small Yellow Onion, finely diced
  • 1/2 cup (120ml) Chicken or Vegetable Broth, low-sodium
  • 2 Large Eggs, room temperature
  • Salt and Black Pepper, to taste
  • Optional: Diced apples, chopped walnuts, crumbled sausage, or dried cranberries

Instructions

  1. Preheat oven to 375°F (190°C). If using fresh bread, toast cubes on a baking sheet for 5-7 minutes until dry, then cool completely.
  2. In a saucepan over medium heat, melt butter. Swirl constantly until it foams, crackles, and develops dark brown specks with a nutty aroma (3-5 minutes). Immediately pour into a heatproof bowl to stop cooking.
  3. In the same pan (off heat or very low), sauté diced onion with a pinch of salt until soft and translucent (5 minutes). Add chopped sage and stir for 30 seconds.
  4. In a large mixing bowl, whisk eggs, broth, and browned butter. Stir in the onion and sage mixture.
  5. Add bread cubes to the wet mixture and gently toss to coat. Let sit for 5 minutes to absorb liquid. Adjust with more broth or bread if needed.
  6. Lightly grease a 12-cup muffin tin. Press the bread mixture firmly into each cup to ensure structure.
  7. Bake for 20-25 minutes, rotating the pan halfway through, until tops are golden brown and crispy.
  8. Let cool in the pan for 5 minutes before removing. Serve warm.

Notes

Use day-old bread for best texture; fresh bread must be toasted first. Brown butter carefully as it burns quickly. Pack the muffin cups tightly to prevent drying out. Can be made gluten-free with GF bread and vegan with plant-based butter and broth.
