Ingredients

Scale
  • 1 cup (227g) unsalted butter, browned
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (120g) toffee bits
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Brown the butter: Place 1 cup (227g) unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts and foams. When it turns golden brown with a nutty aroma, remove from heat and transfer to a heatproof bowl. Let cool about 5 minutes.
  2. Mix sugars and wet ingredients: In a large bowl, combine 3/4 cup granulated sugar and 1/2 cup light brown sugar. Pour in the warm brown butter and stir until combined. Add 1 large egg and 1 teaspoon vanilla extract, mixing until smooth.
  3. Prepare dry ingredients: In a separate bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to wet mixture. Stir gently with a spatula until just combined; dough will be slightly sticky.
  5. Add mix-ins: Fold in 3/4 cup toffee bits and 1 cup semi-sweet chocolate chips evenly.
  6. Chill dough (optional but recommended): Cover and chill dough for 30 minutes to develop flavor and prevent spreading.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Scoop and bake: Drop dough balls about 2 inches apart on baking sheets. Bake 12-15 minutes until edges are golden and crisp but centers are slightly soft.
  9. Cool properly: Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to finish cooling and crisp up.

Notes

Use a light-colored pan to brown butter to better monitor color changes. Chilling dough is recommended for better texture and to prevent spreading. Use quality toffee bits for authentic buttery crunch. Avoid overmixing dough to keep cookies tender. Baking time may vary by oven; watch for golden edges.
