  • 2 cups cooked shredded chicken (rotisserie or poached)
  • 4 ounces softened cream cheese
  • 1/2 cup buffalo sauce (e.g., Frank’s RedOriginal)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 green onions, thinly sliced (for garnish)
  • Optional: Fresh cilantro or ranch dressing for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice about 1/2 inch off the top of each bell pepper. Remove seeds and white membranes to create hollow cups.
  3. Place hollowed peppers cut-side up on the baking sheet and par-bake for 10 minutes to ensure tender-crisp texture. Remove from oven.
  4. In a medium mixing bowl, combine shredded chicken, softened cream cheese, buffalo sauce, garlic powder, and onion powder. Mix until well combined.
  5. Spoon the chicken mixture into the par-baked peppers, packing gently but firmly. Leave about 1/4 inch of space at the top.
  6. In a small bowl, mix shredded mozzarella, cheddar, and panko breadcrumbs. Sprinkle this mixture evenly over the top of each stuffed pepper.
  7. Return to the oven and bake for 15-20 minutes, until cheese is bubbly, golden brown, and panko is toasted. Tent with foil if tops brown too quickly.
  8. Remove from oven and let cool for 5 minutes to allow filling to set. Garnish with sliced green onions and serve warm.

Notes

Par-baking the peppers is recommended to prevent them from remaining too crunchy. Ensure cream cheese is softened to avoid lumps. For a gluten-free option, use certified gluten-free panko or crushed gluten-free crackers. These reheat beautifully in the oven to restore crispiness.
