A simple yet impressive roasted turkey recipe featuring crispy skin and juicy meat, achieved by rubbing a garlic and herb butter mixture under the skin. This method ensures deep flavor penetration and a restaurant-quality result.

  • 1 cup (2 sticks) unsalted butter, softened
  • 6–8 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, leaves stripped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper, freshly cracked
  • 1 whole turkey (12–14 pounds)
  • 2 tablespoons vegetable oil
  • 1 whole lemon, halved
  • 1 large onion, quartered
  • 2 large carrots, chopped
  • 3 celery stalks, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Remove the turkey from the refrigerator and let it sit at room temperature for 30 minutes. Pat the skin dry thoroughly with paper towels.
  3. In a small bowl, mix the softened butter, minced garlic, rosemary, thyme, sage, salt, and pepper until well combined.
  4. Gently insert your fingers under the skin of the breast to loosen it, creating pockets without tearing the skin.
  5. Push handfuls of the garlic herb butter under the skin, spreading it evenly over the breast meat. Reserve some butter for the outside.
  6. Rub the remaining butter all over the turkey skin and drizzle with vegetable oil. Season the outside generously with salt and pepper.
  7. Stuff the turkey cavity with the halved lemon, quartered onion, and chopped carrots and celery.
  8. Truss the turkey legs together with kitchen twine (optional).
  9. Place the turkey on a rack in a roasting pan. Roast for 15 minutes at 425°F (220°C).
  10. Reduce the heat to 350°F (175°C) and continue roasting for 1 hour to 1 hour 30 minutes.
  11. Check the internal temperature in the thickest part of the thigh; it should reach 165°F (74°C). Tent with foil if browning too quickly.
  12. Remove from oven and let rest for 20-30 minutes before carving.

Notes

Patting the skin dry is crucial for crispiness. Do not skip the resting period, as it allows juices to redistribute. Avoid basting frequently as it can steam the skin and make it soggy. If using a frozen turkey, ensure it is completely thawed in the refrigerator before cooking.
