Ingredients

  • Salmon fillets, skin-on, about 6 oz (170 g) each (wild-caught preferred)
  • Honey-ginger jam or glaze, 2 tablespoons
  • Soy sauce, 1 tablespoon (low sodium preferred)
  • Garlic powder, ½ teaspoon
  • Salt and freshly ground black pepper, to taste
  • Olive oil or avocado oil, 1 teaspoon (for brushing skin)
  • Bok choy, 1 lb (450 g), preferably baby or small heads, halved or quartered
  • Sesame oil, 1 tablespoon
  • Minced garlic, 1 clove
  • Toasted sesame seeds, 1 teaspoon (for garnish)
  • Red pepper flakes, a pinch (optional)
  • Soy sauce or tamari, 1 teaspoon (to finish)

Instructions

  1. Pat the salmon fillets dry with paper towels to remove excess moisture.
  2. In a small bowl, mix the honey-ginger jam, soy sauce, and garlic powder.
  3. Brush the glaze generously over the flesh side of each fillet, avoiding the skin.
  4. Season the skin side lightly with salt and pepper.
  5. Let the salmon sit at room temperature for 5-10 minutes to absorb the flavors.
  6. Preheat the air fryer to 400°F (200°C).
  7. Lightly brush the salmon skin with olive oil.
  8. Place the fillets skin-side down in the air fryer basket without overlapping.
  9. Cook for 8-10 minutes, checking at 8 minutes to avoid overcooking, until skin is crisp and flesh is opaque but moist.
  10. While salmon cooks, heat sesame oil in a large skillet over medium heat.
  11. Add minced garlic and cook until fragrant, about 30 seconds.
  12. Add bok choy and stir frequently.
  13. After 3-4 minutes, drizzle soy sauce and sprinkle red pepper flakes if using.
  14. Cook until bok choy is tender but still crisp, about 3 more minutes.
  15. Finish with toasted sesame seeds.
  16. Carefully remove salmon from the air fryer and serve alongside the sesame bok choy.
  17. Drizzle any remaining honey-ginger glaze over the salmon for extra flavor.

Pat salmon skin dry thoroughly to ensure crispiness. Do not overcrowd the air fryer basket to allow proper air circulation. Use a light brush of oil on the skin to prevent sticking and flare-ups.
