  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Olive oil spray
  • 1/3 cup honey
  • 1/4 cup Dijon mustard (recommend Grey Poupon)
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and spray it lightly with olive oil.
  2. Crush the pretzels: Put the pretzels in a large zip-top bag and seal it, squeezing out the air. Use a rolling pin or the bottom of a heavy skillet to crush them into coarse crumbs. Set aside in a shallow bowl.
  3. Set up your breading station: In the first shallow bowl, add the flour. In the second, beat the eggs with a splash of water (about 1 tablespoon) until smooth. In the third, mix the crushed pretzels with the garlic powder, smoked paprika, black pepper, and salt.
  4. Prep the chicken: Pat the chicken cubes dry with paper towels. Season lightly with a pinch of salt and pepper.
  5. Coat the chicken: Working with a few pieces at a time, dredge each chicken cube in the flour, shaking off any excess. Then dip it into the egg wash, letting the excess drip off. Finally, press it into the pretzel mixture, turning to coat all sides. Place the coated bites on the prepared wire rack. Repeat until all the chicken is coated.
  6. Bake the chicken bites: Spray the tops of the coated chicken bites lightly with olive oil spray. Bake for 10 minutes. Then, carefully flip each bite using tongs and spray the other side lightly. Bake for another 8-10 minutes, until the chicken is cooked through (internal temperature of 165°F/74°C) and the coating is golden and crunchy.
  7. Make the honey mustard glaze: While the chicken bakes, combine the honey, Dijon mustard, yellow mustard, apple cider vinegar, and garlic powder in a small saucepan. Whisk together over medium heat. Bring to a gentle simmer, then reduce the heat to low and let it cook for 2-3 minutes, stirring occasionally, until it thickens slightly. Remove from heat.
  8. Glaze the bites: Once the chicken is out of the oven, let it rest for 1 minute. Then, transfer the hot bites to a large bowl. Pour about half the warm honey mustard glaze over them and toss gently to coat. Serve immediately with the remaining glaze on the side for dipping.

Notes

For maximum crunch, use a wire rack and don’t skip the flour step. Crush pretzels by hand for texture. Glaze lightly to avoid sogginess. For gluten-free, use gluten-free pretzels and flour. For air fryer, cook at 400°F for 8-10 minutes, flipping halfway.
