Crispy One-Pan Cheesy Ground Beef Smash Burger Tacos

A quick and easy recipe combining crispy smashed ground beef patties with melty cheddar cheese, served in warm tortillas for a flavorful and satisfying dinner.

  • 1 lb (450 g) ground beef (80/20 blend)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 4 oz (115 g) shredded cheddar cheese
  • 8 small (6-inch) flour tortillas
  • 2 tbsp (28 g) butter
  • Optional toppings: sliced pickles, shredded lettuce, diced tomatoes, sliced jalapeños, taco sauce

Instructions

  1. In a large bowl, combine ground beef with garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.
  2. Heat a cast iron skillet over medium-high heat until very hot, about 3-5 minutes.
  3. Divide beef into 8 equal portions and roll each into a loose ball.
  4. Place one ball into the skillet and immediately press down firmly with a spatula or burger press until about ¼-inch thick. Repeat with remaining balls, cooking in batches if needed.
  5. Cook patties undisturbed for 2-3 minutes until edges are deeply browned and crispy, then flip carefully.
  6. Sprinkle about ½ oz shredded cheddar cheese on each patty after flipping. Cover skillet with a lid or foil to melt cheese for 1-2 minutes.
  7. In a separate pan, melt butter over medium heat and lightly toast tortillas until golden and slightly crisp, flipping once. Keep warm.
  8. Assemble tacos by placing one cheesy patty on each tortilla and adding desired toppings. Serve immediately.

Notes

Use high heat and do not overcrowd the pan to achieve crispy edges. Press patties firmly and quickly after placing in the pan. Add cheese after flipping and cover to melt. Toast tortillas last with butter for best texture. For gluten-free, use corn tortillas or lettuce wraps. Avoid pressing patties after flipping to keep them juicy.
