  • 1 tablespoon olive oil (or avocado oil)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon fine sea salt (or to taste)

Instructions

  1. Prepare the pumpkin seeds: If using fresh pumpkin seeds, separate them from the stringy pulp, rinse thoroughly in a colander under cool water, and pick out any remaining pumpkin bits. Spread on a clean kitchen towel and pat very dry. Let sit for 5 minutes to air-dry slightly.
  2. Preheat the air fryer to 350°F (175°C) for 3 minutes.
  3. In a small mixing bowl, combine the dried pumpkin seeds, olive oil, smoked paprika, garlic powder (if using), cayenne (if using), and salt. Stir well until every seed is evenly coated.
  4. Pour the seasoned seeds into the air fryer basket and spread into a single, even layer. If necessary, cook in two batches.
  5. Air fry at 350°F for 8 minutes, then open the basket and shake or stir. Cook for another 2-4 minutes, watching closely to avoid burning, until deep golden brown and fragrant.
  6. Check for doneness: Seeds should be dry, crunchy, and lightly browned. Let one cool for a few seconds before tasting. If still chewy, cook for another 1-2 minutes.
  7. Transfer seeds to a plate or paper towel-lined bowl and let cool completely for at least 5 minutes. They will continue to crisp as they cool.
