Crowd-Pleasing Cranberry Baked Brie in Puff Pastry (Easy Appetizer)

A stunning yet simple appetizer featuring warm, melted brie wrapped in flaky puff pastry with a tart-sweet cranberry and pecan filling. Perfect for holiday parties, game day spreads, or any gathering where you want to impress without stress.

  • 1 wheel (8 ounces / 225g) brie cheese
  • 1 sheet frozen puff pastry, thawed
  • 1/3 cup (80ml) cranberry sauce
  • 1/4 cup (30g) chopped pecans
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon honey (optional, for drizzling)
  • Fresh rosemary or thyme sprigs for garnish (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. If brie feels very soft, place it in the freezer for 10 minutes. Using a sharp knife, carefully trim the top rind off the brie wheel, leaving sides and bottom intact.
  3. In a small bowl, mix cranberry sauce with chopped pecans. Add a tiny pinch of salt to balance sweetness. Set aside.
  4. On a lightly floured surface, gently roll out thawed puff pastry into a 12-inch (30cm) square.
  5. Place brie in the center of the pastry, cut-side up. Spoon cranberry-pecan mixture on top of brie, spreading evenly.
  6. Bring the four corners of the pastry up and over the brie, pinching seams together to seal. Flip parcel over and place seam-side down on prepared baking sheet.
  7. Optional: Chill assembled brie in fridge for 15-20 minutes to firm up pastry.
  8. Just before baking, brush entire surface of pastry with beaten egg.
  9. Bake for 25-30 minutes, until pastry is puffed and deeply golden brown. If top browns too quickly, tent loosely with foil for last 5-10 minutes.
  10. Let baked brie rest on baking sheet for 5-10 minutes before transferring to serving board. Drizzle with honey and sprinkle with flaky salt and fresh herbs right before serving.

Notes

Partially freezing the brie before wrapping prevents cheese from leaking out during baking. For best results, use a good quality puff pastry like Pepperidge Farm. Can be assembled up to 24 hours in advance and kept refrigerated; brush with egg wash just before baking.
