Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, allowing some overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl or on the stove until just melted. Let it cool slightly.
  3. Whisk together sugar and eggs in a large bowl until pale and slightly thickened, about 2-3 minutes.
  4. Slowly pour the melted butter into the egg mixture while whisking gently. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, cocoa powder, espresso powder (if using), and salt.
