  • 1 packet (about 1 ounce) ranch dressing mix
  • 1/2 cup (1 stick, 113 grams) unsalted softened butter
  • 68 pepperoncini peppers plus 1/4 cup (60 ml) pepperoncini juice

Instructions

  1. Remove the chuck roast from its packaging and pat it dry with paper towels. Trim excess fat if desired.
  2. Optional: Heat 1 tablespoon of oil in a cast iron skillet over medium-high heat. Brown the roast on all sides until a deep golden crust forms, about 3-4 minutes per side.
  3. Place the roast in the crockpot. Sprinkle the entire packet of ranch seasoning evenly over the top and sides of the roast.
  4. Place the softened butter on top of the roast. Scatter the pepperoncini peppers around the roast and pour 1/4 cup of the pepperoncini juice over everything.
  5. Cover the crockpot and cook on low for 8 hours until the roast is fork-tender and juicy. Avoid lifting the lid during cooking.
  6. Use two forks to shred the meat directly in the crockpot, mixing it with the buttery, tangy sauce. Adjust seasoning with salt or pepper if needed.
  7. Serve hot over mashed potatoes, egg noodles, or your preferred sides.

Notes

Do not skip the pepperoncini juice as it is key to the sauce’s flavor and tenderness. Searing the roast before slow cooking is optional but adds flavor and texture. Keep the crockpot lid closed during cooking to maintain heat and moisture. Use softened butter for better sauce blending. For a quicker cook, use high setting for 4-5 hours but low and slow yields best tenderness.
