This easy apple cider mimosa with cinnamon sugar rim is a simple, festive fall cocktail that comes together in under 5 minutes. It’s perfect for Thanksgiving brunch, Halloween parties, or cozy Sunday mornings.

  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 4 ounces chilled apple cider
  • 2 ounces chilled champagne or sparkling wine (dry brut)
  • Ice cubes (optional)
  • Thin apple slice, cinnamon stick, or fresh rosemary sprig (optional garnish)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine the granulated sugar and ground cinnamon. Stir with a fork until evenly distributed.
  2. Set up your dipping station: Pour the honey or maple syrup into another small shallow dish. Place the dish of cinnamon sugar next to it.
  3. Rim the glasses: Take a champagne flute and hold it upside down. Dip the rim into the honey, rotating gently to coat the entire edge. Let any excess drip off, then dip it into the cinnamon sugar mixture. Twist to ensure even coverage. Tap the glass lightly on the counter to shake off loose sugar. Repeat for all glasses.
  4. Add ice (optional): Drop 2-3 ice cubes into each glass.
  5. Pour the apple cider: Measure 4 ounces of chilled apple cider and pour it into each glass.
  6. Top with champagne: Slowly pour 2 ounces of chilled champagne or sparkling wine into each glass, pouring down the side to preserve bubbles.
  7. Garnish and serve: Add a thin apple slice on the rim, a cinnamon stick, or a rosemary sprig. Serve immediately.

Notes

Don’t skip the honey step for the rim; water won’t hold the sugar. Chill all ingredients beforehand. Use a dry brut champagne to balance the sweetness. Pour champagne slowly down the side to preserve bubbles. The cinnamon sugar rim will start to dissolve after about 10 minutes, so serve immediately.
