Easy Apple Cider Pork Chops: Best 30-Minute Dinner

Juicy bone-in pork chops are seared to perfection and finished in a glossy, tangy apple cider sauce with Dijon mustard and thyme. This 30-minute weeknight miracle is impressive enough for dinner parties yet simple enough for a quick family meal.

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 cup apple cider (unfiltered)
  • 2 tablespoons Dijon mustard
  • 4–5 sprigs fresh thyme (or 1 teaspoon dried)
  • 2 tablespoons unsalted butter
  • 1 large shallot, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 tablespoon apple cider vinegar
  • 1/4 cup low-sodium chicken broth

Instructions

  1. Pat the pork chops dry with paper towels. Season generously on both sides with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Heat a large heavy-bottomed skillet (12-inch) over medium-high heat. Add olive oil and heat until shimmering, about 2-3 minutes.
  3. Sear the pork chops in a single layer without crowding. Cook undisturbed for 4-5 minutes until golden brown and easily released from the pan. Flip and cook for another 3-4 minutes. Internal temperature should reach 135°F. Transfer to a plate and tent loosely with foil.
  4. Reduce heat to medium. Add butter to the pan. Once melted, add diced shallot and cook for 2 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in apple cider and chicken broth. Use a wooden spoon to scrape up browned bits from the bottom of the pan. Bring to a simmer and cook for 5-6 minutes until reduced by half and syrupy.
  6. Stir in Dijon mustard and add fresh thyme sprigs. Simmer for 2 more minutes until slightly thickened. Season with salt and pepper to taste.
  7. Return pork chops to the skillet along with any accumulated juices. Spoon sauce over the chops and let warm through for 2 minutes, flipping once. Stir in apple cider vinegar. Remove thyme sprigs before serving.
  8. Let pork chops rest in the pan off the heat for 5 minutes. Serve with sauce spooned over the top.

Notes

Pat the pork chops very dry for the best sear. Let the meat come to room temperature before cooking. Use a meat thermometer to avoid overcooking (target 145°F). Don’t move the chops while searing; they will release naturally when the crust is formed. Scrape the pan thoroughly to incorporate all the browned bits. Taste the sauce before serving and adjust seasoning as needed.
