  • ½ cup old-fashioned rolled oats
  • ½ cup packed brown sugar
  • ½ cup cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack to preheat along with the oven.
  2. Prepare your pie crust. If using a store-bought crust, let it sit at room temperature for about 15 minutes. Gently press it into your 9-inch pie dish, crimping the edges. Place the crust in the refrigerator while you prepare the filling.
  3. Make the fruit filling. In a large mixing bowl, combine the sliced apples, cranberries, granulated sugar, flour, cornstarch, cinnamon, nutmeg, and salt. Toss everything together until the fruit is evenly coated. Add the lemon juice and vanilla extract, and toss again. Let this mixture sit for about 5 minutes.
  4. Prepare the crumble topping. In a medium mixing bowl, whisk together the flour, oats, brown sugar, cinnamon, and salt. Add the cold butter cubes. Using a pastry blender, two forks, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Pop the bowl in the refrigerator while you assemble the pie.
  5. Assemble the pie. Remove the pie crust from the refrigerator. Pour the fruit filling into the crust, spreading it evenly. Take the crumble topping from the fridge and sprinkle it evenly over the fruit filling. Use your hands to gently press some of the crumble into larger clumps on top.
  6. Bake the pie. Place the pie dish on the preheated baking sheet in the oven. Bake for 45-55 minutes, or until the filling is bubbly and the crumble topping is golden brown. If the crumble starts browning too quickly after about 30 minutes, tent the pie loosely with aluminum foil.
  7. Cool before serving. Transfer the pie to a cooling rack and let it cool for at least 2 hours before slicing.

Notes

For best results, use cold butter in the crumble topping and let the fruit filling sit for 5 minutes before assembling. Place the pie dish on a baking sheet to catch drips. Let the pie cool for at least 2 hours before slicing to allow the filling to set. The pie tastes even better the next day.
