This easy candy corn popcorn bark comes together in about fifteen minutes, uses simple ingredients, and is perfect for Halloween parties, cozy movie nights, or any fall gathering. The combination of salty popcorn, sweet candy corn, creamy white chocolate, and crunchy peanuts is absolutely addictive.

  • 8 cups popped popcorn (about 1 bag of microwave popcorn or 1/3 cup unpopped kernels)
  • 1 cup candy corn
  • 1 cup white chocolate chips (or white melting wafers)
  • 1/2 cup creamy peanut butter
  • 1/2 cup salted peanuts
  • 1/4 cup candy corn pumpkins (optional but recommended)
  • 1 tablespoon coconut oil or vegetable shortening

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. Pop about 8 cups of popcorn using your preferred method. Spread on a separate baking sheet or large tray and pick out any unpopped kernels.
  3. In a large mixing bowl, gently toss the popped popcorn with the candy corn and candy corn pumpkins (if using).
  4. Place the white chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted (about 1-2 minutes total).
  5. Add the peanut butter to the melted white chocolate. Microwave for another 20-30 seconds, then stir until completely combined and smooth.
  6. Pour the white chocolate and peanut butter mixture over the popcorn and candy corn. Use a spatula to gently fold everything together until the popcorn is evenly coated.
  7. Transfer the coated popcorn mixture to the prepared baking sheet. Spread into an even layer, about 1/2 to 3/4 inch thick.
  8. While the bark is still wet, sprinkle the salted peanuts evenly over the top. Press them in gently so they stick.
  9. If desired, melt an additional 2 tablespoons of peanut butter with 1 teaspoon of coconut oil and drizzle over the top using a fork or small spoon.
  10. Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely set and firm.
  11. Once fully set, lift the parchment paper to remove the bark from the baking sheet. Break into irregular pieces or cut into squares.
  12. Serve immediately or store in an airtight container.

Use lightly salted popcorn for best savory-sweet balance. Avoid butter-flavored microwave popcorn. Work quickly once chocolate is melted as it sets fast. Refrigerate immediately to keep popcorn crisp. For best texture, use fresh candy corn (not stale). The bark can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months.
