This Easy Candy Corn Popcorn Bark with White Chocolate is a late-night whim turned keeper—a crunchy, sweet, and salty treat that’s perfect for fall and Halloween. It’s a simple dump, melt, chill, and break recipe that comes together in just 10 minutes of prep.

Ingredients

Scale
  • 8 cups popped popcorn (plain or lightly salted)
  • 1 ½ cups candy corn (classic Brach’s brand recommended)
  • 12 oz (2 cups) white chocolate melting wafers or chips (Ghirardelli or CandiQuik recommended)
  • Optional: flaky sea salt (e.g., Maldon)
  • Optional: sprinkles or crushed pretzels

Instructions

  1. Prep the Popcorn: Pop your popcorn according to package directions. Spread it out on a parchment-lined baking sheet and pick out any unpopped kernels. Let it cool completely (about 10 minutes).
  2. Melt the White Chocolate: Place white chocolate wafers or chips in a microwave-safe bowl. Microwave in 30-second bursts at 50% power, stirring well after each interval, until smooth. Stop as soon as it’s melted—do not overheat. If it gets too thick, stir in ½ teaspoon of coconut oil.
  3. Combine the Popcorn and Candy Corn: In a large bowl, gently toss the cooled popcorn with the candy corn until evenly distributed. Be careful not to crush the popcorn.
  4. Pour and Drizzle: Pour the melted white chocolate over the popcorn mixture. Use a spatula to gently fold everything together until mostly coated. Some white streaks are fine—do not overmix.
  5. Spread and Set: Spread the mixture back onto the parchment-lined baking sheet in an even layer. Press down gently with the spatula. If using, sprinkle with flaky sea salt or sprinkles now. Refrigerate for at least 30 minutes, or until the chocolate is completely firm and set.
  6. Break and Serve: Once set, lift the parchment paper out of the pan. Break the bark into rustic pieces with your hands or a sharp knife. Serve immediately or store in an airtight container.

Notes

Cool the popcorn completely before adding chocolate to prevent sogginess. White chocolate is temperamental—melt at low power and stir frequently. Store in an airtight container at room temperature for up to 5 days, or in the fridge if humid. Do not freeze. The bark is best served at room temperature after about 10 minutes out of the fridge.
