  • 1 cup (about 175g) semi-sweet chocolate chips (e.g., Ghirardelli or Guittard)
  • 2 tablespoons (30ml) champagne or sparkling wine (brut or prosecco)
  • 1 teaspoon coconut oil or shortening (optional, for shine)

Instructions

  1. Wash and dry the strawberries thoroughly. Rinse gently under cool water, then pat each berry dry with paper towels, ensuring no moisture remains on the surface or around the stem. Let them sit on a paper towel for a few minutes.
  2. Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals on 50% power, stirring well after each interval, until mostly melted (about 60 to 90 seconds total). Stir until completely smooth. If using coconut oil, stir it in now.
  3. Pour the 2 tablespoons of champagne into the melted chocolate and stir gently. The mixture will thicken slightly at first, then smooth out into a silky, glossy consistency.
  4. Hold a strawberry by the stem or leaves. Dip it into the chocolate, tilting the bowl if needed for full coverage. Lift it out and let excess chocolate drip back into the bowl for a few seconds. Place the dipped strawberry on a parchment-lined baking sheet. Repeat with remaining strawberries.
  5. Place the baking sheet in the refrigerator and let the strawberries set for at least 30 minutes, or until the chocolate is firm and no longer tacky. For a quicker set, freeze for 15 minutes, but watch carefully to avoid freezing the strawberries.
  6. Optional: Before the chocolate sets completely, sprinkle with sea salt, crushed pistachios, or edible glitter. Drizzle with white chocolate for a two-tone effect.
