This copycat Starbucks pumpkin cream cold foam iced coffee is quick, affordable, and genuinely delicious—no drive-through required. It uses real pumpkin puree and a carefully balanced spice blend for a warm, authentic taste.

Ingredients

Scale
  • 2 tablespoons canned pumpkin puree (not pumpkin pie filling)
  • 1/4 cup heavy cream (very cold)
  • 2 tablespoons whole milk (or 2% milk; oat milk works too)
  • 1 tablespoon maple syrup (or brown sugar)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup strong brewed coffee, chilled (or cold brew concentrate)
  • 1/2 cup milk of choice (whole milk, oat milk, or almond milk)
  • Ice cubes (enough to fill your glass)
  • Optional: 1-2 teaspoons maple syrup or vanilla syrup for sweeter coffee base

Instructions

  1. Make the coffee base: Brew your coffee and let it cool completely, or use pre-made cold brew. Pour 1 cup of chilled coffee into a tall glass. Add 1/2 cup of milk and stir gently. If you want a sweeter coffee, stir in 1-2 teaspoons of maple syrup or vanilla syrup. Set aside.
  2. Combine the foam ingredients: In a small bowl or jar, combine 2 tablespoons pumpkin puree, 1/4 cup heavy cream, 2 tablespoons milk, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla extract, and a pinch of salt. Ensure the cream and milk are very cold.
  3. Froth the mixture: Using a handheld milk frother, whisk for 20-30 seconds until thick and creamy, doubling in volume and forming soft peaks. Alternatively, seal the jar and shake vigorously for 30-45 seconds.
  4. Check the consistency: The foam should be thick enough to sit on top of the coffee without sinking. If too runny, froth more or add another tablespoon of heavy cream. If too thick, add a splash of milk and whisk again.
  5. Assemble the drink: Fill the prepared coffee glass with ice cubes. Pour the coffee and milk mixture over the ice, leaving about an inch of space at the top. Gently spoon or pour the pumpkin cream cold foam over the top. Do not stir.
  6. Finish and serve: Optionally, sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top. Serve immediately with a straw.

Notes

Temperature is crucial: keep cream, milk, and pumpkin puree very cold. Do not over-froth; stop when soft peaks form. Use real pumpkin puree, not pumpkin pie filling. Layer foam carefully over the back of a spoon to prevent sinking. The foam is best used immediately but can be refrigerated for up to 2 hours.
