Easy Crispy Honey Mustard Chicken Thighs Recipe with Potatoes and Green Beans

A quick and easy one-pan meal featuring crispy skin-on chicken thighs glazed with a sweet and tangy honey mustard sauce, roasted alongside golden potatoes and fresh green beans.

  • 6 skin-on, bone-in chicken thighs
  • 1.5 pounds Yukon Gold or red potatoes, cut into 1-inch chunks
  • 12 ounces fresh green beans, trimmed
  • ⅓ cup (80 ml) honey
  • ¼ cup (60 g) Dijon mustard
  • 3 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika, plus ½ teaspoon for potatoes
  • Salt and pepper, to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together honey, Dijon mustard, 1 tablespoon olive oil, minced garlic, smoked paprika, salt, and pepper to make the honey mustard glaze. Set aside.
  3. Wash and cut potatoes into 1-inch chunks. Toss with 2 tablespoons olive oil, salt, pepper, and ½ teaspoon smoked paprika. Spread on one side of a large baking sheet.
  4. Pat chicken thighs dry with paper towels. Season both sides with salt and pepper. Place skin-side up on the baking sheet with space between pieces.
  5. Brush chicken thighs with half of the honey mustard glaze.
  6. Roast chicken and potatoes for 25 minutes until chicken skin starts to bubble and caramelize.
  7. Toss green beans with a little olive oil, salt, and pepper. Scatter around chicken and potatoes on the baking sheet. Brush chicken with remaining honey mustard glaze.
  8. Continue roasting for another 15-20 minutes until green beans are tender-crisp, potatoes are golden, and chicken reaches an internal temperature of 165°F (74°C). Optionally broil for 2-3 minutes for extra crispiness, watching carefully.
  9. Remove from oven and let chicken rest for 5 minutes before serving.
  10. Serve chicken thighs with roasted potatoes and green beans, spooning pan juices over the top.

Notes

Pat chicken skin dry before seasoning to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Brush honey mustard glaze halfway through roasting to prevent burning and allow caramelization. Use a meat thermometer to avoid drying out chicken. If broiling, tent with foil if glaze starts to burn.
