  • 1 cup buffalo wing sauce
  • 2 cups cooked, shredded chicken
  • 1 cup blue cheese crumbles
  • 1/2 cup ranch dressing
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Optional: 1-2 green onions, sliced (for garnish)

Instructions

  1. Prep your chicken: If using a rotisserie chicken, remove the skin and shred the meat with two forks to get about 2 cups. If cooking your own, place 1.5 pounds of boneless, skinless chicken breasts in a pot, cover with water, bring to a boil, then simmer for 15-18 minutes until cooked through. Drain, cool slightly, and shred while still warm.
  2. Soften the cream cheese: Take the cream cheese out of the fridge 30 minutes before starting. If forgotten, unwrap and microwave on a plate for 15-20 seconds until soft but not melted. Cut into cubes for faster softening.
  3. Add everything to the crockpot: Place the softened cream cheese, shredded chicken, buffalo wing sauce, blue cheese crumbles, ranch dressing, garlic powder, and black pepper in a 2.5 to 4-quart crockpot. Do not stir yet.
  4. Stir it up: Using a wooden spoon or silicone spatula, stir everything together until the cream cheese is mostly incorporated. Small lumps are fine—they will melt as it cooks.
  5. Cook on low for 2 hours: Cover the crockpot and set to low. Cook undisturbed for 1.5 hours, then stir. The dip should be hot, bubbly, and smooth. If too thick, stir in a tablespoon of milk or cream.
  6. Check and adjust: After 2 hours, taste the dip. Add more buffalo sauce for heat or more blue cheese crumbles for cheesiness. Adjust to your preference.
  7. Garnish and serve: Sprinkle sliced green onions on top. Switch the crockpot to ‘warm’ setting to keep the dip dippable. Serve with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Don’t overcook the dip; 2 hours on low is ideal. Use room temperature cream cheese for smoothest results. Full-fat ingredients provide the best texture. Shred chicken finely for easy scooping. Taste and adjust seasoning before serving. For a thinner dip, stir in a splash of milk after cooking.
