Easy Crockpot Chicken and Wild Rice Soup

A creamy, hearty slow cooker soup with tender chicken and nutty wild rice, perfect for busy weeknights. This set-it-and-forget-it recipe delivers rich flavor with minimal prep.

  • 1.5 pounds (680 grams) boneless, skinless chicken breasts
  • 1 cup uncooked wild rice blend
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups (1.4 liters) low-sodium chicken broth
  • 1 cup (240 ml) heavy cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tablespoon olive oil or butter in a large skillet over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes until softened and onion is translucent. Add minced garlic and cook for 1 minute until fragrant.
  2. Transfer sautéed vegetables to a 6-quart slow cooker.
  3. Place chicken breasts on top of vegetables. Sprinkle wild rice blend evenly over everything.
  4. Pour chicken broth over chicken and rice. Add dried thyme, crushed rosemary, bay leaves, and a pinch of salt and pepper. Stir gently to combine, ensuring rice is submerged.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken is tender and rice is cooked.
  6. Remove chicken from slow cooker and shred with two forks. Discard bay leaves.
  7. In a small bowl, whisk together heavy cream and flour until smooth.
  8. Return shredded chicken to slow cooker. Slowly pour in cream mixture while stirring. Cook on HIGH for 15-20 minutes until broth thickens.
  9. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley if desired.

Notes

Don’t skip sautéing the aromatics for deeper flavor. Add cream at the end to prevent curdling. Soup thickens as it sits; add extra broth when reheating. For freezing, freeze before adding cream.
