  • 1 cup heavy cream (240 ml)
  • 2 cups semi-sweet chocolate chips (340 grams)
  • 1/4 cup unsweetened cocoa powder (30 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream (240 ml, for whipped cream)
  • 2 tablespoons powdered sugar (15 grams, for whipped cream)
  • 1/4 teaspoon peppermint extract (for whipped cream)
  • Crushed candy canes (for garnish, optional)

Instructions

  1. Combine the dry ingredients in the crockpot: cocoa powder, sugar, and salt. Whisk together until no lumps remain.
  2. Add the milk and heavy cream slowly while whisking to help the dry ingredients dissolve evenly.
  3. Add the chocolate chips and vanilla extract. Stir until combined.
  4. Cover and cook on LOW for 2 hours. After 1 hour, give it a quick stir. At the 2-hour mark, whisk again until the chocolate is fully melted and the mixture is smooth.
  5. While the hot chocolate cooks, make the peppermint whipped cream: In a chilled mixing bowl, combine heavy cream, powdered sugar, and peppermint extract. Beat on medium-high speed until soft peaks form, about 2-3 minutes.
  6. Crush the candy canes in a zip-top bag with a rolling pin.
  7. Ladle the hot chocolate into mugs. Top with a dollop of peppermint whipped cream and a sprinkle of crushed candy canes. Serve immediately.

Notes

Cook on LOW only to prevent scorching. Stir halfway through. For parties, switch to WARM after 2 hours and stir every 30 minutes. Keep peppermint in the whipped cream, not the hot chocolate. The whipped cream can be made up to 24 hours in advance.
