  • 3 pounds Russet potatoes, peeled and diced (about 6–7 medium potatoes)
  • 1 medium yellow onion, diced
  • 3–4 cloves garlic, minced
  • 4 cups low-sodium chicken broth (32 ounces)
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6–8 slices bacon, cooked and crumbled
  • 2–3 tablespoons fresh chives, chopped
  • ½ cup shredded cheddar cheese (optional)
  • ¼ cup sour cream (optional)

Instructions

  1. Peel and dice potatoes into ½-inch cubes. Dice onion and mince garlic.
  2. Cook bacon until crispy (oven method: 400°F for 15-18 minutes on a parchment-lined sheet pan). Let cool, then crumble.
  3. In a small skillet or slow cooker with sauté function, melt butter over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and cook 30 seconds until fragrant.
  4. Add diced potatoes to slow cooker. Top with sautéed onions and garlic. Pour in chicken broth, ensuring potatoes are mostly submerged. Add salt and pepper. Stir gently.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork-tender.
  6. About 30 minutes before serving, stir in heavy cream. For thicker soup, gently mash some potatoes with a potato masher.
  7. Taste and adjust salt and pepper as needed.
  8. Ladle soup into bowls. Top with crumbled bacon, fresh chives, shredded cheddar cheese, and a dollop of sour cream if desired. Serve immediately.

Notes

For a thicker soup, mash some potatoes before adding cream. Add cream in the last 30 minutes to prevent curdling. Leftovers keep up to 5 days in the fridge and freeze well for up to 3 months.
