This Easy Crockpot Taco Soup with Ranch Seasoning is a happy accident turned family favorite. It combines taco flavors with a creamy, tangy ranch twist for a hearty, comforting soup that’s perfect for busy weeknights.

  • 1 pound ground beef or ground turkey (85/15 recommended)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained (or 1.5 cups frozen corn)
  • 1 can (14.5 ounces) diced tomatoes with green chiles (e.g., Rotel)
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 packet (1 ounce) ranch dressing mix (e.g., Hidden Valley)
  • 1 packet (1 ounce) taco seasoning (e.g., McCormick)
  • 2 cups beef broth (or chicken broth)
  • Shredded cheddar cheese (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Fresh cilantro, chopped (for topping)
  • Sliced jalapeños (for topping)
  • Crushed tortilla chips (for topping)
  • Diced avocado (for topping)
  • Lime wedges (for topping)

Instructions

  1. Brown the ground beef and onion: Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon. Cook for 6-8 minutes until browned and onion is translucent. Drain excess fat if needed. Add minced garlic in the last minute, stirring until fragrant.
  2. Transfer the meat mixture to the crockpot using a slotted spoon.
  3. Add the canned ingredients: Dump in the drained black beans, kidney beans, corn, diced tomatoes with green chiles, and crushed tomatoes. Layer without stirring.
  4. Add the seasonings and broth: Sprinkle ranch dressing mix and taco seasoning over the top. Pour in the beef broth. Stir well to combine.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, until hot and bubbly and flavors have melded.
  6. Taste and adjust seasoning: Add salt, pepper, or hot sauce if desired. Remember toppings add more flavor.
  7. Serve with your favorite toppings: Ladle into bowls and let everyone customize with cheese, sour cream, cilantro, jalapeños, tortilla chips, avocado, and lime wedges.

Notes

For a thicker soup, use 1 cup less broth. For a thinner soup, add an extra 1/2 cup broth. Let soup rest on warm for 15-20 minutes before serving for best flavor. Leftovers keep in the fridge for up to 5 days and freeze for up to 3 months. To reheat, add a splash of broth if thickened.
