This Easy Crockpot White Chicken Chili is a comforting, creamy, and budget-friendly dinner that tastes like it simmered all day but comes together in just 10 minutes of prep. Perfect for busy weeknights, it’s a hug in a bowl that picky eaters and adults alike will love.

  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium)
  • 2 (15-ounce) cans white beans (Great Northern, cannellini, or navy), drained and rinsed
  • 1 cup frozen corn (no need to thaw)
  • 4 cups low-sodium chicken broth (one 32-ounce box)
  • 1 medium white onion, diced
  • 4 cloves garlic, minced
  • 1 (4-ounce) can diced green chiles (mild)
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon mild chili powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 4 ounces cream cheese, softened to room temperature
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Optional toppings: shredded Monterey Jack cheese, sliced avocado, tortilla strips, sour cream, lime wedges, hot sauce

Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, drain and rinse the beans, and measure out your spices.
  2. Layer everything in the slow cooker: start with the diced onion and minced garlic on the bottom. Place the chicken breasts on top. Add the drained beans, frozen corn, and diced green chiles. Sprinkle the cumin, oregano, chili powder, salt, and pepper over everything. Pour the chicken broth around the chicken (not directly on top to avoid washing off the spices).
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours. Do not lift the lid during cooking.
  4. When the chicken is cooked through and tender, carefully remove the breasts to a cutting board. Let rest for 1-2 minutes, then shred with two forks.
  5. Cut the softened cream cheese into a few pieces and stir into the hot chili until melted and creamy. If it doesn’t melt smoothly, cook on high for another 10 minutes.
  6. Return the shredded chicken to the pot and stir gently. Taste and adjust salt and pepper if needed. Let cook on low for another 15-20 minutes if desired, or serve immediately.
  7. Ladle into bowls and garnish with fresh cilantro and optional toppings. Serve hot.

Notes

For extra flavor, sear the chicken breasts in a hot skillet with oil for 2-3 minutes per side before adding to the slow cooker. To thicken the chili, mash 1/2 cup of beans before adding or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) at the end. Leftovers taste even better the next day. Freeze without cream cheese for best texture upon reheating.
