  • 3 ounces aged cheddar or gouda (aged cheese)
  • 2 ounces gorgonzola or roquefort (blue cheese, optional)
  • 4 ounces Genoa salami (hard salami, thinly sliced)
  • 3 ounces prosciutto (paper-thin)
  • 3 ounces soppressata (spicy variety, sliced)
  • 4–6 ounces crackers (mix of buttery water crackers and seedy or whole wheat)
  • 1 apple or pear (thinly sliced, tossed with lemon juice)
  • 1/4 cup dried apricots or figs
  • 1/4 cup Marcona almonds or candied pecans
  • 1/4 cup Castelvetrano or kalamata olives (drained and patted dry)
  • 2 tablespoons honey (for drizzling)
  • 1/4 cup cornichons
  • 2 tablespoons fig jam or onion chutney (optional)
  • 1 ounce dark chocolate (optional, broken into pieces)
  • A few sprigs of rosemary or thyme (optional, for garnish)

Instructions

  1. Remove brie and aged cheeses from the refrigerator 5 minutes before starting to let them come to room temperature.
  2. Choose your board and wipe it clean. If using a wooden board, rub with a damp cloth (no soap).
  3. Place small bowls (for olives, honey, jam) on the board in a triangular pattern at the corners or edges.
  4. Add the cheeses in different areas of the board. Cut aged cheese into thin slices or small cubes; leave brie whole with a knife beside it. Space them about 4-5 inches apart on a 12-inch board.
  5. Layer in the meats: fold salami slices in half twice and arrange in small piles or fan shapes. Drape prosciutto in loose ribbons. Place meats near complementary cheeses (salami with aged cheddar, prosciutto with brie).
  6. Arrange crackers in small clusters around the board (8-10 per person), near each cheese and in the center.
  7. Tuck in the fruit: fan out apple or pear slices in gaps, scatter dried apricots or figs in empty spaces.
  8. Add nuts and cornichons in small groupings, nestling cornichons near meats or cheeses.
  9. Drizzle honey directly over the brie or into a small bowl.
  10. Finish with garnishes: tuck rosemary sprigs between items, add dark chocolate pieces near dried fruit. Fill any empty spots with extra crackers or nuts.

Notes

Let cheese come to room temperature for best flavor. Prep ingredients up to 24 hours ahead, but assemble board 30 minutes before serving. Add crackers just before serving to keep them crisp. For a vegetarian version, skip meats and double up on cheese with marinated artichoke hearts, roasted red peppers, and hummus. For a dessert board, swap meats for dark chocolate, white chocolate, and chocolate-covered almonds with fresh berries and shortbread cookies.
