  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp chili powder (mild or medium heat)

  • 1 tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp cayenne pepper
  • ½ cup tomato sauce (plain or no-salt-added)
  • ½ cup low-sodium chicken broth
  • Juice of 1 lime
  • A handful fresh cilantro, chopped (optional)
  • 812 soft corn or flour tortillas, warmed
  • Toppings: diced avocado, shredded cheese, sour cream, chopped onions, pickled jalapeños (to taste)

Instructions

  1. Finely chop the onion and mince the garlic. Measure out all the spices.
  2. Place the chicken breasts or thighs at the bottom of the crockpot. Sprinkle the chopped onions and minced garlic evenly over the chicken.
  3. In a small bowl, mix chili powder, smoked paprika, cumin, oregano, salt, black pepper, and cayenne (if using). Sprinkle this seasoning blend evenly over the chicken and onions.
  4. Pour the tomato sauce and chicken broth over the seasoned chicken.
  5. Cover and set the crockpot on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
  6. Remove the chicken and shred it using two forks or meat shredder claws. Return shredded chicken to the crockpot and stir to coat with sauce.
  7. Squeeze the juice of one lime over the shredded chicken and stir in chopped cilantro.
  8. Warm the tortillas in a dry skillet or microwave until soft.
  9. Assemble tacos by spooning shredded chicken onto tortillas and topping with desired fixings.
