  • 1 package (10 oz) regular marshmallows
  • 6 cups Rice Krispies cereal
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt

  • 1 teaspoon coconut oil or vegetable shortening
  • Brown food coloring (optional)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving some overhang. Lightly grease the parchment with butter or non-stick spray.
  2. In a large pot over medium-low heat, melt the 6 tablespoons of butter, stirring occasionally, about 2-3 minutes.
  3. Add the entire bag of marshmallows and stir constantly over medium-low heat until mostly melted, about 4-5 minutes.
  4. Remove the pot from the heat. Stir in the vanilla extract and pinch of salt until smooth and glossy.
  5. Pour in the 6 cups of Rice Krispies and fold gently until all cereal is coated, about 1-2 minutes. If using, add brown food coloring and fold until evenly distributed.
  6. Transfer the mixture to the prepared pan. Use a piece of parchment paper to press it down evenly to about 3/4-inch thick. Let cool for 15-20 minutes until firm.
  7. Use the parchment overhang to lift the slab out of the pan. Place on a cutting board and cut into rectangles about 2 inches wide and 3 inches long (12-16 pieces).
  8. Lightly butter your hands. Take one rectangle and gently roll it between your palms, tapering the ends to form a football shape. Place on a parchment-lined baking sheet. Repeat with all pieces.
  9. In a small microwave-safe bowl, combine white candy melts or white chocolate chips with 1 teaspoon coconut oil. Microwave in 20-second intervals, stirring between each, until smooth (about 60-90 seconds total).
  10. Transfer melted white chocolate to a small piping bag or zip-top bag with a tiny corner snipped off. On each football, pipe two parallel lines down the center, then 3-4 short crosswise lines to create the lace pattern.
  11. Let the white chocolate set completely, about 15-20 minutes at room temperature, or refrigerate for 5 minutes.

Notes

For best results, use fresh marshmallows and gentle pressure when shaping. If the mixture is too sticky, let it cool another 5 minutes. For dairy-free, use vegan butter and dairy-free marshmallows. For gluten-free, use certified gluten-free crispy rice cereal.
