  • 4 tablespoons unsalted butter
  • 6–8 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish
  • 2 cups broccoli florets or green beans
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, paprika, and Italian seasoning. Let them sit for 5 minutes.
  2. Heat your skillet over medium-high heat and add the olive oil. Wait until the oil shimmers, about 2 minutes.
  3. Place the chicken thighs in the skillet, skin-side down if they have skin. Cook for 5-6 minutes without moving them. Flip and cook another 4-5 minutes until golden brown.
  4. Transfer the seared chicken to a plate and tent with foil.
  5. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and stir constantly for about 30 seconds until fragrant.
  6. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan. Let it simmer for 2 minutes until slightly reduced.
  7. Stir in the heavy cream and add the broccoli florets. Let everything simmer for 3-4 minutes until the vegetables are tender-crisp and the sauce has thickened slightly.
  8. Nestle the chicken back into the skillet, spooning some sauce over the top. Cover and cook for 5-7 minutes until the chicken is cooked through (165°F internal temperature).
  9. Sprinkle the Parmesan cheese over everything and let it melt for about a minute.
  10. Garnish with fresh parsley and serve straight from the skillet with rice, pasta, or crusty bread.

For best results, pat chicken dry before seasoning to ensure a golden crust. Lower heat when adding garlic to prevent burning. Let chicken rest after searing to keep it juicy.
