  • 4 large bell peppers (any color, red or orange preferred for sweetness and color)
  • 1 cup (170g) uncooked quinoa
  • 1 cup (150g) crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup halved cherry tomatoes (fresh or frozen)
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon fresh dill (optional)
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • 2 cups (475ml) vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse quinoa under cold water. In a medium saucepan, bring vegetable broth to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and fluff with a fork. Keep lid on while resting for 5 minutes.
  3. Slice tops off bell peppers and remove seeds and membranes. Set aside.
  4. Heat olive oil in a skillet over medium heat. Add chopped onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  5. In a large bowl, combine cooked quinoa, sautéed onion and garlic, halved cherry tomatoes, crumbled feta, chopped parsley (and dill if using), lemon juice, salt, and pepper. Stir gently to combine.
  6. Spoon the quinoa mixture into each bell pepper cavity, pressing lightly to pack but not overflow.
  7. Place stuffed peppers upright in a baking dish. Drizzle a bit more olive oil over the tops.
  8. Bake uncovered for 25-30 minutes until peppers are tender but still hold shape and filling is heated through. If peppers brown too fast, loosely cover with foil.
  9. Let peppers cool for 5 minutes before serving to allow flavors to meld.

Rinse quinoa thoroughly to remove bitterness. Avoid overcooking peppers to keep a slight bite. Use fresh herbs generously for brightness. Add garlic last when sautéing to prevent bitterness. Adjust salt carefully as feta is naturally salty. Filling texture can be made creamier by adding Greek yogurt or cream cheese. Drain juicy ingredients like cherry tomatoes to avoid soggy filling. For vegan version, omit feta and use plant-based cheese or tofu.
